Tart and frothy, with bright lemon over herbaceous agave and just enough sugar to round the edges. The foam carries an aromatic hit of bitters.
Ingredients
- 2 oz Blanco Tequila
- 0.75 oz Fresh Lemon Juice
- 0.75 oz Simple Syrup
- 1 Egg White
- Angostura bitters · optional garnish
- a lemon twist · optional garnish
Method

Dry-shake the tequila, lemon juice, simple syrup, and egg white without ice to build the foam.

Add ice and shake again until well chilled.

Double-strain into a chilled coupe.

Garnish with a few drops of Angostura bitters and a lemon twist.
The Story
The Sour — spirit, citrus, sugar — predates the cocktail glass itself, and agave slots in beautifully. The Tequila Sour trades the whiskey of its ancestor for blanco's grassy bite, with an egg-white cap that turns the whole thing silky.
