Tropical and layered. Frothy pineapple and tart lime up front, cherry and herbal Bénédictine underneath, with gin holding the whole thing together — fruity but never cloying.

Ingredients

  • 1.5 oz Gin
  • 0.5 oz Cherry Heering
  • 0.25 oz Bénédictine
  • 0.25 oz Triple Sec
  • 0.25 oz Grenadine
  • 4 oz Pineapple Juice
  • 0.5 oz Fresh Lime Juice
  • 1 dash Angostura Bitters
  • Pineapple wedge · optional garnish
  • cherry · optional garnish

Method

  1. 1

Add all ingredients to a shaker with ice.

  2. 2

Shake hard until well-chilled and frothy.

  3. 3

Strain into a hurricane glass filled with fresh ice.

  4. 4

Garnish with a pineapple wedge and a cherry.

The Story

Created around 1915 by bartender Ngiam Tong Boon at the Long Bar of Raffles Hotel in Singapore. Its rosy hue let women drink it in public when a lady openly ordering liquor was frowned upon — a gin sling dressed as fruit punch. It remains one of the most famous cocktails ever poured.
