Big, layered, and tropical. Three rums give it depth from bright to funky to fiery, three juices keep it lively and tart, and passion fruit and honey pull it together with a lush sweetness. Complex and strong, but the citrus keeps everything in motion.

Ingredients

  • 1 oz White Rum
  • 1 oz Dark Rum
  • 0.5 oz Overproof Rum
  • 0.75 oz Fresh Lime Juice
  • 0.5 oz Fresh Orange Juice
  • 0.5 oz Fresh Grapefruit Juice
  • 0.5 oz Passion Fruit Syrup
  • 0.5 oz Honey Syrup
  • 1 dash Angostura Bitters
  • Mint sprig · optional garnish

Method

    Add every ingredient to a shaker with a scoop of crushed ice.

    Flash-blend or shake hard until frothy and cold.

  3. 3

    Pour unstrained into a tall glass and top with crushed ice.

    Garnish with a mint sprig.

The Story

The Rum Barrel is Don the Beachcomber in full maximalist mode: three rums, three juices, passion fruit, honey, and spice, traditionally served in a barrel-shaped mug big enough to justify the ingredient list. It belongs to the same family as the Zombie and the Navy Grog — the drinks that made a spectacle of rum's range — and like them it was a closely guarded house recipe before Beachbum Berry pieced it back together. A drink built to impress.
