Rich and savory, the raw yolk's silky body carrying Worcestershire's umami depth and a sharp hit of hot sauce and pepper. Not built to be sipped — it's a single, bracing swallow.

Ingredients

  • 1 Egg Yolk
  • 1 tsp Worcestershire Sauce
  • 3 dashes Hot Sauce
  • 1 pinch Salt
  • Cracked black pepper · optional garnish

Method

  1. 1

Slide the egg yolk, unbroken, into a small rocks glass.

  2. 2

Add the Worcestershire sauce, hot sauce, and salt around it.

  3. 3

Finish with a generous crack of black pepper.

  4. 4

Drink it in one go, swallowing the yolk whole — that's the traditional way.

The Story

The Prairie Oyster's exact origin is lost to 19th-century folk remedy, but it has always been what it looks like: a raw egg yolk dressed like a real oyster on the half shell, meant to be downed in one motion as a hangover cure or a bracing pick-me-up. Unlike most "cures" of its era, it never depended on a hair-of-the-dog shot of spirit to work — the whole point was always the egg and the seasoning, which is exactly why it survives as a genuinely alcohol-free classic rather than a modified cocktail.
