ClassicTwo rums and citrus wrapped in warm honey and baking spice.
Rich and warming. Aged rum gives it a mellow oak base, the citrus keeps it lively, and honey with cinnamon and allspice wraps everything in a soft, gingerbread-adjacent spice. Fuller and rounder than a typical sour — closer to a tropical drink for cooler weather.
Ingredients
- 1.5 oz Aged Rum
- 0.5 oz Dark Rum
- 0.75 oz Fresh Orange Juice
- 0.75 oz Fresh Lime Juice
- 0.5 oz Honey Syrup
- 0.25 oz Cinnamon Syrup
- 0.25 oz Allspice Dram
- Mint sprig · optional garnish
Method

Add every ingredient to a shaker with a scoop of crushed ice.

Flash-blend or shake hard until frothy and cold.

Pour unstrained into a tall glass and top with crushed ice.

The Story
The Pearl Diver is Don the Beachcomber at his most secretive: the original leaned on "Gardenia Mix," a proprietary blend of butter, honey, and spices whipped together and doled out by the ounce so no one could reverse-engineer the drink. This version rebuilds that warmth from honey, cinnamon, and allspice — the same cozy, baked-spice character without the guarded formula. Like most of Don's menu, it survived on Beachbum Berry's detective work decades later.
