
Nui Nui
ClassicA single aged rum, dressed up with citrus, cinnamon, and allspice.
Warm, spiced, and surprisingly elegant. The aged rum stays front and center while cinnamon and allspice give it a mulled, autumnal edge and the citrus keeps it from turning heavy. A little soda lifts the finish. Spice-forward but balanced.
Ingredients
- 2 oz Aged Rum
- 0.75 oz Fresh Lime Juice
- 0.5 oz Fresh Orange Juice
- 0.5 oz Cinnamon Syrup
- 0.25 oz Allspice Dram
- 1 dash Angostura Bitters
- 1 oz Soda Water
- Cinnamon stick · optional garnish
Method

Shake the rum, citrus, cinnamon syrup, allspice, and bitters with ice.

Strain into a rocks glass filled with crushed ice.

Top with soda water and stir once.

Garnish with a cinnamon stick.
The Story
Nui Nui is a Don the Beachcomber creation that shows how much he could coax from a single base spirit. Where his other drinks stacked three or four rums, the Nui Nui takes one good aged rum and layers flavor around it with "Don's Spices #2" — a cinnamon-and-vanilla syrup — plus allspice and citrus. It's a lesson in tiki's real trick: not the rum count, but the spice work. The recipe, like the rest of Don's book, was decoded and revived by Beachbum Berry.
