Big, funky, and unapologetically rich. The Jamaican rum brings overripe banana, brown sugar, and a whiff of varnish-y ester that tangles with Campari's bitter orange and the sweet vermouth's herbs. Heavier and hotter than a gin Negroni, but the bittersweet balance holds. A slow, contemplative sipper.

Ingredients

  • 1 oz Overproof Rum
  • 1 oz Campari
  • 1 oz Sweet Vermouth
  • Orange peel · optional garnish

Method

    Add the rum, Campari, and sweet vermouth to a mixing glass with ice.

    Stir until well-chilled, about 20-30 seconds.

    Strain over one large cube in a chilled rocks glass.

  4. 4

    Express an orange peel over the surface and drop it in.

The Story

The Kingston Negroni is the work of Joaquín Simó, created during his time at New York's Death & Co and published in the bar's 2014 book. His swap was pointed: in place of gin, a full ounce of Smith & Cross, the pungent overproof Jamaican rum whose "hogo" — the funky, high-ester character of pot-still Jamaican spirit — is anything but shy. At overproof strength it stands up to Campari and sweet vermouth without flinching, making it the boldest member of the Negroni family.
