Bone-dry and zesty. Sharp lime and grapefruit up front, a nutty-cherry whisper of maraschino, and clean white rum carrying it all.
Ingredients
- 2 oz White Rum
- 0.75 oz Fresh Lime Juice
- 0.5 oz Fresh Grapefruit Juice
- 0.5 oz Maraschino Liqueur
- Lime wheel · optional garnish
Method

Add the rum, lime juice, grapefruit juice, and maraschino to a shaker with ice.

Shake hard until well-chilled.

Double-strain into a chilled coupe.

Garnish with a lime wheel.
The Story
Ernest Hemingway's personal daiquiri, perfected at La Floridita in Havana. Diabetic and never one for moderation, he took his without sugar and with a double measure of rum — the fearsome "Papa Doble." This is the balanced version bartenders serve today: tart lime and grapefruit, rounded by maraschino instead of sugar.
