Dry and crisp. Juniper and tart lime lengthened by soda, with no sweetness to get in the way — clean and thirst-quenching.

Ingredients

  • 2 oz Gin
  • 0.5 oz Fresh Lime Juice
  • Soda Water to top
  • Lime wheels · optional garnish

Method

    Fill a highball glass with ice.

    Add the gin and lime juice.

  3. 3

    Top with soda water and stir gently.

  4. 4

    Garnish with two lime wheels.

The Story

Born in 1880s Washington, D.C. — first with bourbon, then with gin — and named for lobbyist Colonel Joe Rickey. Its defining trait is what it leaves out: no sugar at all, just spirit, fresh lime, and soda, making it one of the driest, most refreshing highballs ever built.
