Dark 'n' Stormy
ClassicIBA OfficialDark rum over ginger beer. A storm in a glass.
Warm and spicy, with dark rum's molasses-and-caramel richness pouring down through sharp, fizzy ginger beer. Fresh lime cuts the sweetness and keeps it lively. The unstirred float means the first sip is all rum, the last all ginger — a drink that changes as you go.
Ingredients
- 2 oz Dark Rum
- 0.5 oz Fresh Lime Juice
- Ginger Beer to top
- Lime wedge · optional garnish
Method
- 1
Fill a highball glass with ice.
- 2
Add the lime juice, then top with cold ginger beer, leaving room at the top.
- 3
Slowly float the dark rum over the back of a spoon so it settles as a dark cloud.
- 4
Garnish with a lime wedge.
The Story
The Dark 'n' Stormy belongs to Bermuda, where Gosling's dark rum and local ginger beer have been paired for more than a century — the story goes that a sailor said the drink's cloudy color was "the color of a cloud only a fool or a dead man would sail under." The floated rum is the whole point: it sits atop the pale ginger beer like a gathering storm before you stir it in. It remains one of the few cocktails with its build written into its name.
