Daiquiri
ClassicIBA OfficialRum, lime, sugar. Nothing to hide behind.
Crisp, dry, and impeccably balanced — the whole point is the tension between tart and sweet. White rum lays down a clean, faintly grassy base, fresh lime brings a bright acidic snap, and just enough sugar rounds it without tipping into sweetness. Cold, sharp, and deceptively simple.

The Story
The Daiquiri takes its name from a beach and iron mine near Santiago de Cuba, where — the story goes — an American mining engineer named Jennings Cox improvised it around 1898, stretching a dwindling supply of gin by turning instead to the local rum, lime, and sugar. It found its polish in Havana at El Floridita, where bartender Constantino Ribalaigua Vert refined the serve and made it the city's signature — and a fixture of Ernest Hemingway's afternoons. Stripped to three ingredients, it remains the drink bartenders reach for to judge a rum, and a room.
