Cynar Negroni
ClassicThe Negroni softened and made earthy, Campari swapped for Cynar.
Gentler and more savory than the original. Cynar's earthy, herbal bitterness lacks Campari's high citrus snap, so the drink turns softer and a little sweeter, with a cola-and-herb depth beneath the gin's juniper. Approachable without losing the Negroni's bittersweet backbone.

The Story
Where most Negroni variations change the base spirit, the Cynar Negroni changes the bitter. Swapping Campari for Cynar — the bittersweet artichoke amaro — is a modern move that keeps the equal-parts template intact while trading Campari's sharp, citrus-forward bite for something rounder and more vegetal. It's a common bartender's riff rather than any one person's invention, and a reliable answer when a Negroni feels a touch too aggressive.
