Corn 'n Oil

Classic

Dark rum, falernum, and bitters, built over ice. A Barbadian classic named for how it looks, not what's in it.

The Story

Corn 'n Oil hails from Barbados, where it's built the way rum drinks were before tiki bars got hold of them: dark rum, falernum, and a heavy dash of Angostura, stirred and served short. The name describes the look rather than the ingredients — a dark, unmixed rum float sitting like an oil slick over the paler falernum underneath — and the drink has stayed a home-bar and rum-shop staple across the Caribbean for exactly that reason: it's simple enough to make from memory.
