Ingredients
- 1.5 oz Gin
- 0.75 oz Fresh Lemon Juice
- 0.5 oz Raspberry Syrup
- 1 Egg White
- Raspberries · optional garnish
Method

Add the gin, lemon juice, raspberry syrup, and egg white to a shaker without ice.

Dry-shake hard for 10-15 seconds to build the foam.

Add ice and shake again until well-chilled.

Double-strain into a chilled coupe and garnish with a few raspberries.
The Story
The Clover Club predates Prohibition, named for a gentlemen's club that met at the Bellevue-Stratford Hotel in Philadelphia in the late 1800s. It was a genuinely fashionable drink of its day — then Prohibition and a wave of sweeter fashions buried it, and for years it was dismissed as a frivolous "pink" cocktail. The craft revival restored its reputation: made properly, it's a beautifully balanced gin sour with a plush raspberry heart.
