Classic

A Savoy classic — Old Tom gin sharpened with maraschino and orange bitters.

Dry and aromatic. Old Tom's rounded juniper carries maraschino's nutty-cherry perfume, with a whisper of lemon and orange bitters keeping it bright rather than sweet. Elegant, faintly floral and decidedly gin-forward.

Ingredients

  • 2 oz Old Tom Gin
  • 0.25 oz Maraschino Liqueur
  • 0.25 oz Lemon Juice
  • 2 dashes Orange Bitters
  • Maraschino cherry · optional garnish

Method

  1. 1

Add every ingredient to a shaker with ice.

  2. 2

    Shake until well chilled.

  3. 3

    Strain into a chilled coupe.

  4. 4

    Garnish with a maraschino cherry.

The Story

The Casino appears in Harry Craddock's 1930 "Savoy Cocktail Book," a spirit-forward member of the Aviation and Martinez family that leans on maraschino for its character. It was built for Old Tom gin — the lightly sweetened style that bridges genever and modern London Dry — which softens the drink just enough to let the cherry-almond liqueur and orange bitters sing. A quiet, sophisticated aperitif that rewards good ingredients.
