Caipirissima

Ingredients

• 2 oz White Rum
• 1 Lime
• 2 tsp Sugar
• Lime wheel · optional garnish

Method

   Cut the lime into wedges and add to a rocks glass with the sugar.

   Muddle firmly to release the juice and the oils from the peel.

   Fill the glass with ice and pour in the white rum.

   Stir well and garnish with a lime wheel.

The Story

The Caipirissima is the rum version of Brazil's national cocktail, the Caipirinha, which is traditionally made with cachaça. It swaps the grassy sugarcane spirit for a lighter, cleaner white rum.
