Crisp and tangy, exactly like the Pegu it descends from: juniper-forward gin, sharp fresh lime, and the candied bitter-orange of curaçao, framed by two kinds of bitters. The blue curaçao brings the same orange backbone as the original — only the colour changes, glowing electric blue in the glass.

Ingredients

  • 2 oz Gin
  • 0.75 oz Blue Curaçao
  • 0.75 oz Fresh Lime Juice
  • 1 dash Angostura Bitters
  • 1 dash Orange Bitters
  • Lime wheel · optional garnish

Method

    Add every ingredient to a shaker with ice.

    Shake until well chilled.

    Double-strain into a chilled coupe.

    Garnish with a lime wheel.

The Story

The Blue Pegu is a modern riff on the Pegu Club, the 1920s house drink of a British officers' club outside Rangoon. The original balanced gin, orange curaçao, and lime into a template for the gin sour; swap the orange curaçao for blue and the recipe scarcely changes, but the drink turns a luminous tropical blue. It is the same crisp, bitters-lifted classic — just dressed for a warmer, brighter room.
