
Blue Blazer
ClassicA blazing arc of flaming Scotch, poured between two mugs.
Warm, smooth, and lightly toasted. Blended Scotch keeps it approachable, the brief burn caramelises and rounds it, and honey and lemon lift the finish. The drink is simple; the spectacle is everything.
Ingredients
- 2 oz Blended Scotch
- 0.5 oz Honey Syrup
- 3 oz Water
- 1 Lemon Twist
- Lemon twist · optional garnish
Method

Warm the Scotch and pour it into one heatproof metal mug; put the boiling water and honey in a second.

Carefully ignite the Scotch, then pour the blazing liquid in a long arc from one mug to the other, back and forth, building a stream of blue fire. Do this well clear of anything flammable, with a clear surface and no loose sleeves.

Once mixed and the flame dies, pour into a warmed glass.

Garnish with a lemon twist.
The Story
The Blue Blazer is Jerry Thomas's showpiece — the drink that made his name at the bar of the Occidental in 1860s San Francisco, thrown in a blazing ribbon between two silver mugs "like a stream of liquid fire." It is pure theatre and genuinely dangerous, which is the point; Thomas advised the novice to practise with cold water first. A professional flourish, not a party trick.
