Ingredients

  • 2 oz White Rum
  • 0.5 oz Peach Liqueur Schnapps
  • 1.5 oz Pineapple Juice
  • 0.75 oz Fresh Lime Juice
  • 0.5 oz Simple Syrup
  • 8 Mint Leaves
  • Mint sprig · optional garnish

Method

    Gently muddle the mint with the simple syrup in a shaker.

    Add the rum, peach schnapps, pineapple, and lime with ice.

    Shake hard and strain into a rocks glass over crushed ice.

    Garnish with a fresh mint sprig.

The Story

Aku Aku takes its name from the Polynesian-themed restaurants and the Easter Island moai that decorated the mid-century tiki boom. A brighter, fresher cousin to the darker Don the Beachcomber drinks, it pairs light rum with pineapple and mint and a whisper of peach — a formula built for sipping poolside rather than contemplating by candlelight. It's tiki in its sunnier, more approachable mode.
