Ingredients
- 1 oz White Rum
- 0.5 oz Honey Syrup
- 0.5 oz Fresh Lime Juice
- Prosecco to top
- Mint sprig · optional garnish
Method

Add the rum, honey syrup, and lime juice to a shaker with ice.

Shake until well-chilled.

Strain into a chilled flute.

Top with cold Prosecco and garnish with a mint sprig.
The Story
First printed in the 1949 "Esquire's Handbook for Hosts," the Air Mail is a Honey Daiquiri lengthened with sparkling wine — named for the then-glamorous era of airmail postage. It's essentially a tropical French 75 built on rum.
