Agavoni
ClassicThe tequila Negroni, equal parts and bright as agave.
Lively and vegetal. Unaged blanco tequila brings peppery, green-agave brightness that sits higher and sharper than gin, cutting cleanly through Campari's bitter orange while the sweet vermouth softens the landing. Fresher and more energetic than most of its cousins.
Ingredients
- 1 oz Blanco Tequila
- 1 oz Campari
- 1 oz Sweet Vermouth
- Orange peel · optional garnish
Method
- 1
Add the tequila, Campari, and sweet vermouth to a mixing glass with ice.
- 2

- 4
Express an orange peel over the surface and drop it in.
The Story
The Agavoni takes its name from a simple portmanteau — agave plus Negroni — and its recipe from the family's oldest rule: keep the Campari and sweet vermouth, change the base. Blanco tequila slots into the gin's place unaltered, equal parts and all. The drink is closely tied to Italy's own love of tequila and aperitivo culture; its precise origin is uncertain, but it has become the go-to when a Negroni drinker wants agave instead of juniper.
