The Story
The absinthe drip is the traditional French way to serve the spirit, a ritual that dates to the Belle Époque cafés of Paris. Iced water is dripped over a sugar cube, and the slow dilution causes the louche: the green spirit clouds into a pearly, opalescent haze as its aromatic oils fall out of solution.
