151 Swizzle

Overproof rum swizzled with lime, spice, and a heavy hand of bitters.

Bracing and aromatic. The overproof rum burns bright, but lime, cinnamon, and a heavy dose of bitters build a spiced, tart frame around it, and crushed ice softens the whole thing as it melts. Strong, spicy, and cooling all at once.

Ingredients

  • 1.5 oz Overproof Rum
  • 0.75 oz Fresh Lime Juice
  • 0.5 oz Simple Syrup
  • 0.25 oz Cinnamon Syrup
  • 3 dashes Angostura Bitters
  • 1 dash Absinthe
  • Mint sprig · optional garnish

Method

    Add every ingredient to a tall glass filled with crushed ice.

    Swizzle with a swizzle stick or barspoon until the glass frosts over.

  3. 3

    Top with a little more crushed ice to fill.

  4. 4

    Garnish with a mint sprig and, if you like, a dusting of grated nutmeg.

The Story

The 151 Swizzle is Don the Beachcomber's exercise in taming overproof rum. Built on 151-proof rum — the incendiary bottle most bars reserve for floats and flames — it's swizzled hard over crushed ice so the melt and the spice pull the heat into balance. The swizzle itself is an old West Indian technique, spinning a forked stick between the palms to chill and dilute; here it's the only thing standing between you and a very stiff drink.
